1 cup Mozzarella cheese, shredded
2 cups sweet corn Kernels (fresh or canned and drained)
14 grape tomatoes, halved lengthwise
3 green onions, white and green parts, thinly sliced
¼ cup fresh cilantro, chopped
1 tablespoon plus 1 teaspoon rice vinegar
2 tablespoons extra virgin olive oil
1/8 teaspoon black pepper
½ teaspoon salt, optional
1 ripe avocado, peeled and diced
- In a medium bowl toss corn, tomatoes, green onions, and cilantro.
- Fold in red wine vinegar, olive oil, pepper, and salt.
- Gently fold in avocado and cheese; mix until well combined. Serve cold or at room temperature.
