Avocado, Corn and Cheese Summer Salad

Avocado, Corn and Cheese Summer Salad


1 cup Mozzarella cheese, shredded

2 cups sweet corn Kernels (fresh or canned and drained)

14 grape tomatoes, halved lengthwise

3 green onions, white and green parts, thinly sliced

¼ cup fresh cilantro, chopped

1 tablespoon plus 1 teaspoon rice vinegar

2 tablespoons extra virgin olive oil

1/8 teaspoon black pepper

½ teaspoon salt, optional

1 ripe avocado, peeled and diced


  1. In a medium bowl toss corn, tomatoes, green onions, and cilantro.
  2. Fold in red wine vinegar, olive oil, pepper, and salt.
  3. Gently fold in avocado and cheese; mix until well combined. Serve cold or at room temperature.
